Here is another recipe for anyone that wants it.
1/2 Cup Shortening
1 1/2 Cups Sugar
2 Eggs
1 Cup Mashed Ripe Banana
1 Teaspoon Vailla Extract
2 Cups Flour
3/4 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1/2 Cup Buttermilk
In a large bowl, cream shortening & sugar until light & fluffy.
Add eggs, one at a time, beating well after each addition.
Beat in bananas & vanilla.
Combine flour, baking soda, baking powder, & salt.
Add to creamed mixture alternately with buttermilk, beating well after each addition.
Fill paper lines muffin cups two-thirds full.
Bake at 375 degrees F for 18 - 20 minutes or until a toothpick comes out clean.
Cool for 10 minutes before removing from pan to wire rack to cool completely.
Makes approx 1 1/2 doz.
Lemon Butter Frosting (optional)
2 Cups Confectioners' Sugar
1/3 Cup Butter, softened
3 Tablespoons Mashed Ripe Banana
1 Tablespoon Lemon Juice
In a small bowl, combine ingredients
Beat until light & fluffy.
Frost cooled cupcakes.
**** For the cupcakes, I reduce the sugar to 1 cup. These are a great on-the-go breakfast/snack cupcake. I have not used the frosting recipe, as we prefer not to use icing.
