roasted bell peppers...take some bell peppers (all different colors) and quarter and seed them. Put them in a big ziploc with 3 cloves diced garlic, 1 tsp or so balsamic vinegar, 3 tbs of olive oil and salt and pepper. toss them up and let them marinate for 15 min to 3 hours. Put them skin side down on the grill (be careful...the oil will make the fire jump) and roast for about 3-5 minutes (until you see black streaks on the skins) sprinkle them with feta. YUM

Grilled Mexican Corn


Ingredients
4 ears corn
1/2 cup mayonnaise
1 1/2 cups sour cream
1/4 cup freshly chopped cilantro leaves
1 cup freshly grated Parmesan
1 lime, juiced
Red chili powder, to taste
2 limes cut into wedges, for garnish

Directions

Remove the husks of the corn but leave the core attached at the end so you have something to hold onto. Grill the corn on a hot grill or cast iron griddle pan until slightly charred. Turn it so it gets cooked evenly all over. Mix the mayonnaise, sour cream and cilantro together. Grate the Parmesan in another bowl. While the corn is still warm slather with mayonnaise mix. Squeeze lime juice over the corn and shower with Parmesan. Season with chili powder and serve with extra lime wedges.

Foiled pack grilled shrimp. A favorite in our house:

Pull out some tinfoil and spread out your uncooked shrimp, drizzle some olive oil over them and either lime or lemon juice, and favorite seasoning. (I use perfect pinch lemon herb) Set on grill rack over low coals and cook through. Delicious and healthy.

inside out hamburgers or turkey burgers...

mix the meat with a little garlic powder, red pepper and black pepper. pound them really thin. put one patty and then whatever you want....cheese, bacon, green chiles, salsa, roast peppers (see above) and put another thin patty on top. Seal the edges...really tight....grill like normal. It really makes the burgers juicy and it is so fun to assemble!

Here is my favorite BBQ... Walk to the freezer in garage take out a T-Bone steak , let it defrost and throw on the grill with garlic salt and use one of dean's Bud Light Lime beer to create a mist to bbq the steak in while drinking the rest of the beer as it cooks..... roflmaoooooooo. actually all I do is get the T-Bone dean BBQ's it and drinks .....lol. Smile

P.S does this count... rofl Smile

But of course it counts, may I borrow Dean? LOL

Melt In Your Mouth BBQ Ribs

Ingredients:
4 lbs pork ribs
3/4 cup light brown sugar
1 teaspoon hickory smoke salt
1 tablespoon paprika
1 tablespoon garlic powder
1/2 teaspoon ground red pepper (optional)
2 cups of your favorite barbecue sauce

Directions:

-Preheat oven to 300 degrees f.
-Peel off tough membrane that covers the bony side of the ribs.
-Mix together the sugar and spices to make the rub.
-Apply rub to ribs on all sides.
-Lay ribs on two layers of foil, shiny side out and meaty side down.
-Lay two layers of foil on top of ribs and roll and crimp edges tightly, edges facing up to seal.
-Place on baking sheet and bake for 2-2 1/2 hours or until meat is starting to shrink away from the ends of the bone.
-Remove from oven.
-Heat broiler.
-Cut ribs into serving sized portions of 2 or 3 ribs.
-Arrange on broiler pan, bony side up.
-Brush on sauce.
-Broil for 1 or 2 minutes until sauce is cooked on and bubbly.
-Turn ribs over.
-Repeat on other side.

*Alternately, you can grill the ribs on your grill to cook on the sauce.

Bar-B-Que Beans

1 lb ground beef, browned
1 medium sized onion, diced and 2 cloves garlic, minced (add to ground beef as it cooks)
3 or 4 hot dogs thinly sliced
1 can baked beans
2 cans pork'n'beans
1/4 cup barbecue sauce
1/4 cup ketchup
1 Tbs mustard
1 Tbs worcestershire sauce
1 Tbs horseradish
1 tsp hot sauce (more or less to taste)

Mix all together and put in baking dish and bake at 275 degrees for 2 hours or put in slow cooker on low heat for 3 or 4 hours.
These beans go over really well at any summer get together, I never have any left to take home!

BBQ Candied Carrots

These taste just like you cooked them with Brown Sugar...But there is absolutely NO Sugar used !

Things you will need... Carrots, Butter, Aluminum Foil.
Approx. cooking time...1 - 1 1/2 hours.

Take carrots and wash and peel them. cut into approx 3" - 4" pieces &
then Julienne them. Tear off foil into approx 6" squared pieces.

On each piece of foil place about 8 carrots. Add a pat of Butter (1 tsp.) Then fold up as follows...Grab the top and bottom ends and bring together, fold down 1/4" at a time until tight, then bring sides up & fold in towards the middle & press down firmly. Place on BBQ and cook as you would a Baked Potato Turning pkgs over every 15-20 minutes.

campfire packets:

boneless chick breasts, cubed
bell peppers
onions
mushrooms
diced garlic
cubed potatoes
olive oil
lemon juice (optional)
salt and pepper

put everything in a big ziploc bag, toss.

make a foil packets and seal ingredients inside. Cook in the hot coals of a fire for about 40 minutes or until chicken is cooked and potatoes are tender.

How to make a Microwaved Baked Potato cook and taste like it was Baked in the oven without all the heat of an oven.

Wash potatoes, then puncture with a fork 2 times in the top, then take a knife and insert in each end approx 1 inch (this helps potato to cook more evenly).

Place in microwave and cook for approx. 8 to 10 minutes depending on how many potatoes you are cooking it may take a little longer. When potatoes are done immediately take out of microwave and wrap each potato in aluminum foil as you would if baking in the oven. Place on rack of oven and let set for 20 min.

This allows the potato to continue cooking & "Fluff up" without all the heat of turning the oven on. They will be more fluffy and taste just like an oven baked potato...And no one will know that it was cooked in the microwave!
